One of the most popular creations from Italian bakeries, this tricolor treat consists of three layers of red, green, and white (or light yellow) cake that resembles the Italian flag, then brushes the top with melted chocolate. But before you dive into these gorgeous, colorful cookies, keep in mind that rainbow cookies are a bit “equipment-intensive” and often require two mixing bowls (one for dough, one for egg whites), three cake pans, and a small saucepan for melting the chocolate. Despite all the things and steps, they’re actually pretty easy to make – and so adorable.
For even layers, it’s helpful to weigh the dough and divide it by weight rather than dividing it by sight. Be careful not to mix too much with the egg whites to ensure the height of your cake. You want to have as much height as possible for each layer.
